New Year, New Body

OK, NO! This is NOT me. I am just inspired to adopt this way of thinking about my health and yes, jump on the first of the year band-wagon and TRY to lose a few pounds.

About 6 months ago, I started having some pretty severe foot pain that I learned was plantar facitis. Still hurts, but I am determined to lose some of the excess weight I have put on as a result of my not moving as much as I should. A gimpy foot makes it hard to do that. I am now as heavy as I was just after having kids. Yikes! I feel terrible and I know I have to do something about it.

Instead of swearing I will go to the gym everyday, which I will fail at, I will start with attainable goals like those listed here. I can do that! So, I hope to begin a healthier life this year. I will keep you posted as to how it is going.

Grab and Go HEALTHY Cookie

Grab one or two of these delish cookies as you run out the door in the morning or for a light treat before a workout.

Superfood Breakfast Oatmeal Cookies (adapted from The Healthy Foodie)

Wet Ingredients:
1/2 cup applesauce
1/2 cup cottage cheese or canned coconut milk for vegan or dairy-free (blended tofu might work but I haven’t tried it)
2 eggs, whisked (for vegan, 1 mashed banana or blended tofu or 2 flax eggs)
1 tsp pure vanilla extract
1 1/2 Tbsp coconut oil (or other oil, butter, ghee or Earth Balance)

Dry Ingredients:
1/4 cup amaranth flour (or buckwheat, oat, brown rice, sorghum or other gluten free flour)
1/4 cup flaxseed meal
2 Tbsp chia meal (or more flax meal or almond flour)
2 Tbsp almond flour (or your favorite gluten free flour – buckwheat, oat, teff, etc)
1/4 tsp sea salt
1 to 2 tsp ground cinnamon
1/4 tsp ground ginger, optional
1/4 tsp baking powder
1/4 tsp baking soda
1 1/4 cup rolled oats

Add-ins
1/2 cup chopped walnuts (or your favorite nut or seed)*
1/2 cup goji berries (or your favorite dried fruit – blueberries, apricots, cherries, raisins, dates, figs, mango, cranberries etc)
1/4 cup hulled hemp seeds (sunflower seeds or pumpkin seeds or more fruit or nuts could be subbed if desired)

Directions
1. Preheat the oven to 400F. Line one large baking sheet with parchment paper.
2. In a blender or a food processor, mix all the wet ingredients together until smooth and set aside.
3. In a large mixing bowl, combine all the dry ingredients together.
4. Add blended wet ingredients to dry ingredients and mix delicately to combine. Fold in hemp seeds, goji and walnuts.
5. Drop by tablepoonfuls onto prepared baking sheet. *You can leave the cookies as is if you want them looking like little mounds, or you can flatten them down some with the back of your spoon.
6. Bake for 10 to 13 minutes, depending on how flat (or unflat) you made your cookies, or until they look just slightly undercooked. Cool completely on a cooling rack then transfer to an airtight container. Store in the refrigerator, where the cookies will keep for up to a week and enjoy!

*You can easily make these nut-free if necessary, just omit and replace with your favorite seeds or dried fruit
Recipe Notes: For a sweeter cookie, feel free to add 2-4 Tbsp of coconut sugar or use honey/agave/maple syrup and decrease the cottage cheese/coconut milk by 2 Tbsp.

Makes 12-15 cookies

Sorry all, I could not help myself.

It can be just this overwhelming for many. Myself included. So much paperwork and back-up documentation.

But, I like to think that since many of us have made less money than in years past, we hopefully could be getting a bit of a refund this year. (Hopefully)

I for one, will put my refund to good use...I will pay a bill or 2. Boring I know but it will make me feel better to know that I have one less bill to pay...at least for another month.

I hope you too will find the silver lining, in this otherwise daunting time of the year. You still have a few hours to get those taxes in! Good Luck!

Mr. Sun

We have been waiting patiently here in the Chicago Land area for Mr Sun. He finally made his appearance both yesterday and today. In fact, today I think we topped 84 degrees!

(Ok there was ~~bit~~ alot of humidity with that heat)

but still and all, the sun was a welcome sight.

I have finally gotten motivated to finish racking the yard and even fertilized my sad looking grass. All because, I know that tonight, we are in for some "whopping" storms ahead of an inevitable COLD front.

Tomorrow we are only expecting a high in the mid 50's.

Weather in this area can change with the snap of your fingers...I should just be grateful that we are not expecting snow...it has happened before!

So lets be grateful for the day we had and sing...Oh Mr. Sun, Sun, Mr. golden sun, please shine down on me...

My List Update

Do you all remember my April Resolution List I made last year?

To refresh you memory, here it is again...

My List:...and how I have managed to do this past year...

1. Start exercising regularly...OK, so I have not exercised too regularly, I have gotten better about making the effort, but I will try to get better about this one.

2. Sew some things for my home, myself, and my family...I have sewn some cute pillows for the family room and have made some table runners for the change of seasons, and I have even started to teach myself how to crochet. I feel progress has been made with this resolution! (Yea me!)

3. Have my sewing machine "tuned up" so sewing will be less of a chore...Yes! Last May I did have my machine tuned up...otherwise I could not have made my new sewing projects!

4. Visit family more often...I have made significant progress with is goal. I even was able to meet up with and visit my aunts and uncles in Utica, IL last summer. (Starved Rock State Park) Since they all live in different parts of the country, I thought this was a great opportunity to reconnect with them and it felt sooooo good. :) I have a "Kick a_ _" cool family!

5. Plant my veggie garden and actually "tend" it! I did it! I had so many tomatos, and zucchinis, I didn't know what to do with them!

6. Preserve some of the bounty of my garden...I am still finding recipes for this goal, I did, however make TONS of marinara sauce with all of those tomatoes and lots of zucchini bread that I froze and enjoyed throughout the winter :)

7. Plant a wildflower garden in the "way-back" of the yard...A work in progress...I plan to divide some of the plants I managed to propagate and make my wildflower garden bigger.

8. Learn to take better photos...epic FAIL! I think I will need to get a new camera, mine is just not cooperating lately. My son's $65 camera seems to take better pictures than my "fancy" one. :(

9. Brush up on my Spanish..FAIL again. I need to have my kids help me with this one. They need to MAKE me talk to them in Spanish and then correct me when I mess up. They just laugh at me.

10. Be more organized! I think I have improved. This will always be a work in progress.

11. Spend "quality" time with my family. YES! With our swimming schedule as it is, we do get lot of time to be together and we love it!

I think overall, I have made great strides on my list. I will continue to work on it and plan to add a few more goals to it this spring and summer. I'll keep you posted. Do you have any nagging goals for this year?

Yes, I plan on being an early bird this year.

I am planning on planting some hearty cool weather plants this week.

Lettuce, spinach and some swiss chard is in the works.

I have gathered some buckets, pots and window boxes to get a jump on my planting.

The key in the Chicago land area at this time of the year, is to keep the containers of plants close to the house to ward off late season frost.

With the insanely high cost of produce in the grocery store these days, I am looking forward to growing and eating some homegrown organic HEALTHY vegetables.

A healthier, tastier menu will soon be served in the Zito house! :)

Big Snow Is Coming!!!!

Chicago is about to get about 20 inches of snow by Weds!

We Midwesterners are a hardy breed. We will make it through this.

Here's how you should act before the white stuff starts falling.

Don't Freak Out

Take a deep breath. It's going to be alright. I promise. We are adults who live in the modern world and this isn't going to kill you. Sure, you might get stuck in your house for a few days because the villages can't get the plows working, but you will survive. Snow happens every winter, and even though the nightly news wants to make it seem like a very scary and newsworthy thing, it's not. Trust me.

Don't Cancel Anything...yet...

Don't cancel anything tonight because it's actually supposed to start snowing tomorrow. We like to pretend like the science of meteorology is more than asking a Magic 8-Ball some questions and making educated guesses. It's not! Just look at the forecast. "Six to 24 inches." That's a lot of leeway. And they can't tell you when it's going to happen, when it's going to start, or when it's going to stop, exactly. Chicago might even get less...or more... Yes, the weatherman can be wrong. So don't reschedule all your meetings, nix your dinner date, or cancel school just because we've been told it's going to snow. Wait to see what happens.
This isn't Georgia afterall, where they don't know what to do when they see a bit of frost on their window.

Don't Get Caught Unprepared

That doesn't mean you shouldn't prepare at all. Make arrangements in case the heavy snowfall ends up affecting your life. Take home those files you might need in case you have to work from home the next day. Call your coworker with the SUV and let her know she might need to pick you up if the roads are nasty. Put the babysitter on notice in case you need someone to take care of the kids. Put all your little ducks in a row—just wait before you make your final decisions. All your planning might be unnecessary.

Don't Buy Bread and Toilet Paper, unless you REALLY need it

Since you're preparing, you might want to hit the supermarket for some food, but don't buy toilet paper, bread, and milk. This is what everyone does, like they're stocking a bomb shelter or something. Even if you are trapped in your house, you will be stuck there for a couple of days max, and even then you can trudge out if you really need to. So, what should you stock up on? Junk food, coffee, booze, and a few frozen dinners in case you need some actual nourishment. But milk, bread, and toilet paper? Please. It's not the worst thing if you have to wipe your bum with some Kleenex. But if you run out of Ben and Jerry's? That could be a tragedy!

Don't Wear Something Stupid

Since we're getting ready, let's talk about your outfit for Tuesday/Wednesday. You want it to be warm. And water resistant. And you'll need heavy socks and some boots. But just cause it's snowy is no excuse to look like a mess. If you end up having to go into work or somewhere outside of the house (other than shoveling the sidewalk) you still have to wear something other than sweatpants (or pajamas). Make sure your long underwear is clean and handy and take your time coming up with a layered look that is both warm and appropriate. Don't get lazy and think, "It's snowing, who cares?" because everyone who sees you will be thinking, "Who is that slob in the snow?"

Lastly, unburry the shovels...just because you will wish you had.

Enjoy your potential day off and snuggle with the kids- after sledding and drinking hot chocolate! Enjoy the excuse to SLOW DOWN!

6 Ways to Take a Mental Vacation

Sometimes you need to get away, but you don’t have the time or money. Don’t despair: A mental vacation can help reduce your stress.

Small stressors can quickly add up to major stress and one big stressful event can send you reeling, with no idea of how to start addressing it. If you could just get away for a little stress relief, you know you would be okay. But too few of us have the time — or the money — to run off on an impromptu vacation.

Well, you don’t have to spend a dime or go anywhere other than a quiet spot nearby to take a mental vacation.

Stress Relief: Take Off on a Mental Vacation

If you don’t find a way to reduce stress, your health will pay the price, both mentally and physically. It’s not necessary to get a lengthy massage or head to a beach to relax — you can unwind every day in simple ways and still get a major benefit.

"People who are under a lot of stress have physical problems related to constantly being under stress," says Sally R. Connolly, a social worker and therapist at the Couples Clinic of Louisville in Louisville, Ky. "And if you don’t find ways [to relieve it], even in small periods of time, you can have long-term consequences." It’s crucial to add stress relief to your everyday routine, she says.

Connolly suggests learning techniques to reduce stress and trying to sneak in one or two each day. "Even if it’s five minutes in the morning and five minutes at night, just find time to do that," she says.

Stress Relief: Six Quick Mental Trips

Visualizing a stress-free place and other relaxation techniques are quick and easy ways to help your whole body calm down and give you just the boost you need to get on with your day. Connolly suggests these six ways for you to slip away on a mental vacation to reduce stress:

1. Read a book in bed. Connolly says this is a great escape and can leave you feeling refreshed, relaxed, and ready to face whatever is outside your bedroom door. Your bed is warm, cozy, comfortable, and a peaceful place for you. It feels luxurious, and getting lost in a good book is a perfect way to forget, then refocus, your own thoughts.

2. Visualize relaxation. Steal a few quiet moments to close your eyes and think of an image that relaxes you — such as the warm sun on your skin and the sound of the ocean, a big country field sprinkled with flowers, or a trickling stream. Connolly suggests thinking back to a time when you felt peaceful and relaxed, and focus on releasing the tension from your toes to your head.

3. Look at pictures from a happy time. Connolly recommends pulling out snapshots from a photo album of a family vacation or a fun dinner with friends. Reflect on your memories of that occasion, and what made it so enjoyable. Spend a few quiet moments reminiscing, and you’ll find yourself more relaxed.

4. Look out a window. Distract yourself by focusing on something other than what’s stressing you. Grab a steaming cup of coffee or tea, close the door, and take a mental break. Do a little people watching, appreciate any birds within view, or enjoy some fluffy clouds rolling by. Allow yourself to daydream for a few minutes.

5. Listen to a relaxation CD. Invest in a couple of these CDs for a short daily escape, says Connolly. You may like to hear chirping birds, rolling waves, or gentle rain — whatever your choice, closing your eyes and listening to these soothing sounds while doing some deep breathing can help you relax and de-stress.

6. Take a walk. Exercise is a great way to relieve stress because it’s a great escape for your mind. Head out for a quiet early morning walk or lace up your sneakers on your lunch break. Walking along a trail, waterfront, or other peaceful place when possible may offer even more relaxation.

Treat yourself to a 5-, 10-, or 20-minute mental vacation each day and train your body to relax and reduce stress — you’ll be amazed at how much better you feel after taking just a few luxurious moments all to yourself.

Alton’s Buffalo Wings

Ingredients

• 12 whole chicken wings (about 3 pounds)

• 3 ounces (6 tablespoons) unsalted butter

• 1 small clove garlic, minced

• 1/4 cup hot sauce

• Kosher salt

Directions

Place a 6-quart saucepan, with a steamer basket and 1 inch of water in the bottom, over high heat, cover and bring to a boil.

Remove the tips of the wings and discard or save for making stock. Use kitchen shears or a knife to separate the wings at the joint. Place the wings in the steamer basket, cover, reduce the heat to medium and steam 10 minutes. Remove the wings from the basket and carefully pat dry. Lay out the wings on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator to dry, about 1 hour.

Preheat the oven to 425 degrees F. Remove the paper towels on the pan and replace with parchment paper. Roast on the middle rack of the oven, about 20 minutes. Turn the wings over and cook 20 to 30 more minutes, or until the meat is cooked through and the skin is golden brown.

While the chicken is roasting, melt the butter in a small bowl with the garlic. Pour this along with the hot sauce and 1/2 teaspoon salt into a bowl large enough to hold all of the chicken and stir to combine. Remove the wings from the oven, transfer to the bowl and toss with the sauce. Serve warm.

I WILL NOT fall for the Black Friday craziness.

Instead I will sit at my computer in the comfort of my own home and leisurely start my Holiday shopping with a nice cup of tea. :)

My first stop in cyber land so far, was JC Penny.com. They had some great specials starting last night on some must have pieces of clothing that my kids desperately needed and Free shipping!

After that I browsed LLBean.com for the free shipping and extra 15% off of the Black Friday Specials. A couple of gifts were picked up for my hubbie and my boys.

My last stop and most productive shopping trip was to Longaberger.com. I managed to pick up some wonderful Black Friday specials like these beautiful Holiday Longaberger Dishes. they were 65% OFF!

Autumn Thoughts

I am in a very FALL frame of mind. The weather is getting cooler and even a bit of frost lingers on the roofs in the morning. I am looking forward to Thanksgiving next month and warming up the decor in the house to celebrate it. The leaves on the ground beckon my attention and I remember the fun of raking and jumping in a monsterous pile of them when I was little. What can I say? The beauty of the leaves and the smell of a bon fire conjure up wonderful memories for me. This season is my "rose"...I am stopping to smell it because before you know it, the snow flakes will be here.

I am not complaining, but I do not know what to do with all of my tomatoes these days! After YEARS of having all of the garden bounty eaten by the local rodents, I now have relocated some of my garden. The result? Lot and lots of veggies! I have made, salsa, sauce, bruscetta, b.l.t's and so much more! I love it! But I think I have exhausted the recipes I have. Any more suggestions? Help!

Roasted Vegetable Soup from the Garden

I made this recipe yesterday. I originally found it in a Good Food magazine years ago. This is one of the best recipes ever! So simple too! Roasting the vegetables gives them a sweet, smoky flavor. Serve this soup with slices of crusty Italian Bread, or with toasted cheese sandwiches. Yum!

Roasted Vegetable Soup:

Prep: 30 minutes

Total: 1 hour 30 minutes

Ingredients

Serves 4

• 6 beefsteak tomatoes, halved and cored

• 2 leeks, white and pale-green parts cut into 1/2-inch pieces (or onions)

• 2 carrots, cut into 1/4-inch pieces

• 4 cloves garlic (or more if you love it like I do)

• 2 tablespoons olive oil

• Coarse salt and ground pepper

• 2 cans (14 1/2 ounces each) reduced-sodium vegetable broth

• 1/4 cup chopped fresh basil

Directions

1. Preheat oven to 425 degrees. In roasting pan, toss tomatoes with leeks, carrots, garlic, and oil. Season with salt and pepper. Roast in a single layer (tomato cut sides down) until tender, 1 hour. Using tongs, peel off tomato skins.

2. In saucepan, bring vegetables, vegetable broth, and 1 cup water to a boil. Reduce heat; simmer 10 minutes.

3. In batches, puree in blender. Stir in basil. Heat through and enjoy!

My List Update

If you remember back in April, I made a To Do List. I wanted to accomplish several things this past Spring and during the Summer. Lets see what I was able to accomplish so far and what I better get moving on…

My List:
1. Start exercising regularly. (I have done a TON of yard work…does that count?)
2. Sew some things for my home, myself, and my family. (I am working on a couple of projects as I write this. I will follow up on this with a future blog showing you a couple of my fun projects.)
3. Have my sewing machine "tuned up" so sewing will be less of a chore. (NO! I have to keep this on the To Do list.)
4. Visit family more often. (I was able to reconnect with many relatives I have not seen in years at my daughter’s Graduation Party a couple of weeks ago. It was so much fun, and I promise to see family more often in the future)
5. Plant my veggie garden and actually "tend" it! (YES!!!!! I had a very successful garden this year, thanks to my boys. I will also share more about my garden in the next blog post)
6. Preserve some of the bounty of my garden. (So far I have made and frozen salsa…more to come)
7. Plant a wildflower garden in the "way-back" of the yard. (This is one thing I regret to say, I have not made progress on. I wish I could, but the mosquitos this summer have made going in the “way back” yard nearly impossible.)
8. Learn to take better photos. (Again, I have made no progress with this…I am keeping this on the To Do list and will work more on it in the Fall)
9. Brush up on my Spanish. (Sadly, No. My boys and I will have to attempt to converse more en Espanol)
10. Be more organized! (Yes and No…This is a constant battle. In a small home, you tend to clean up one area, and the stuff seems to get shuffled to another area, which then requires the same attention. A vicious on going battle)
11. Spend "quality" time with my family. (YES!!!! This summer our family was able to spend some quality time together. While our annual summer vacation did get cancelled due to other financial obligations….daughter going to college, we were able to spend some time working on projects together…ie: garden!)
Most of the items on my list are enjoyable to me. A few are more or less ambitions. I guess the theme of my list is to live my life simpler. (if that is a word) Instead of buying everything, I would like to be more self sufficient in my own home. -(This too has been a growing experience. I have enjoyed the time I have been able to spend at home instead of going out and spending money unnecessarily. The kids have been a huge help working towards simplifying our lives and pulling their weight helping around the house and yard.)

Try this recipe with the 9 X 13 pan:

FIESTA BAKE

Yield: 8-10 servings Bake: 350 30 min.

1lb. ground beef/Turkey

1 clove garlic, minced1 onion, diced ( could use dried chopped, or leave out)

1/2 teaspoon salt

1/4 teaspoon pepper

1 10-oz. can enchilada sauce, mild or hot

1 8-oz can tomato sauce

2 15-oz cans chili beans

1 17-oz can whole-kernel corn, undrained

1 4 1/4-oz can chopped olives (optional)

8 to 10 corn tortillas, torn into large pieces

1/2 cup finely shredded cheeseBrown ground beef, garlic and onion.

Season with salt and pepper. Add sauces, beans, corn, and olives. Place 1 cup meat mixture in the bottom of a Longaberger 9 X 13 pan. Add a layer of corn tortillas. Repeat layers until meat mixture and tortillas are used, ending with meat mixture. Cover and bake in a 350 oven for 30 minutes. Sprinkle with cheese and let stand 10 minutes before serving. Top each serving with some finely shredded lettuce.

This is the first of several of these spectacular or unique places I have see several times because I thought it was so unique. The Longaberger Co. “Big Basket” or Home Office, in Newark, Ohio. (It is only a 6 hour drive from Chicago so, is consdered a "do-able" weekend trip)

What started out as a dream by Dave Longaberger, Founder of The Longaberger Company, has been built into a giant basket to house the entire corporate offices of the company. Dave believed the idea was one of his best and would draw attention to the company, while simultaneously helping to build our brand. However, when he started spreading the idea of building a Home Office that was really a basket, he found that most people just thought that Dave was making a joke as Dave was a notorious practical joker. Not only did the bankers, architects and construction companies not take Dave seriously, neither did many of the employees who worked for The Longaberger Company, but Dave persevered. One of Dave's most admirable attributes was that when he had a dream and believed in it, he always found a way to accomplish it, and he did. Dave's dream was achieved on December 17, 1997 when the Home Office that is designed to resemble a basket finally opened for business.

In 1998, The Longaberger Home Office also received a Build Ohio Award for its synthetic plaster system. The building is made of stucco over a steel structure, which helps create the look of an actual Longaberger Basket®. The Home Office continues to attract the attention of media from around the world, even as far away as Tokyo.

While the exterior of the Home Office is a marvel in itself, the building's interior is truly breathtaking. A grand staircase, player piano and marble floors are just part of the beautiful décor of the building's seven story atrium. The majority of the cherry woodwork used in the Home Office was harvested from the Longaberger Golf Club in Hanover; dried in our facility; sawed and shaped at our Construction Woodshop; finished in our Construction Paint Booth and installed by our Construction Division.

August ... A Change of Seasons

Gosh! I looked at the calendar just last week, and realized that the summer is almost over! The summer has simple blown by at blistering speed. I apologize for not keeping up on my blog site this summer, but am looking forward to the onset of my favorite time of the year...Fall.

The dog days of summer are still upon us, but I am anticipating the start of the next school year, and am looking forward to cooler nights, and that crisp smell of leaves in the air.

I am planning to do some more outdoor projects in the much more comfortable weather this fall. I seem to become a bit more domestic during this time of the year too. I love to bake, cook and transition the house to the warm cozy atmosphere I enjoy throughout the winter. My blogging in the upcoming months will reflect this.

Let's start right now! Here is a wonderful recipe I got last year in Ohio while visiting Longaberger's Big Basket... (The Longaberger Co. home office) I will talk more about the Big Basket is an upcoming blog on fun places to see in the USA.

Longaberger Apple Cider Syrup

1/2 cup sugar

4 t. cornstarch

1/2 t. ground cinnamon

1 cup apple cider or apple juice

1T. lemon juice

2T. butter or margarine

In a small saucepan stir together the sugar, cornstarch and cinnamon. Then, stir in the apple cider or apple juice and lemon juice. Cook and stir the mixture over medium heat until mixture is thickened and bubbly. Then cook and stir for 2 more minutes. Remove saucepan from heat and stir in the butter or margarine till melted. Makes about 1 1/3 cups.

This Longaberger recipe is very tasty. It makes a great apple dip. It is a fall/autumn kind of recipe. It works perfect in the Longaberger Salt Crock or the new Low Bowl. Fill the Vegetable Bowl with apple slices. This could make a great sauce for over ice cream. I haven't tried it yet, but I think this would be good on apple pancakes too!

I was thinking about how fast the summer is flying by and our family has neither the time, or the finances to make it a Real Vacation. What is a family to do in these difficult financial times?

As I was thinking about this, I came across some great ideas at ABCnew.com.

Americans love going to baseball games, amusement parks, the beach, and on vacation when the kids are out of school.
But this year, financial woes are dampening many families' plans.
There are still plenty of ways to have summer fun on a budget.
You can picnic, take a hike, go camping, go to the beach or take advantage of numerous other free outdoor adventures.

But not everything is free.

Looking to save more money? Consider your local minor league team.
"Minor league baseball is a lot of fun and they are building these new, small stadiums that are really intimate and the players aren't rich and spoiled yet. So often times, you get a better baseball game out of it for a lot cheaper," said Charles W. Bryant, who co-hosts Stuff You Should Know on Howstuffworks.com along with Josh Clark.
Many stadiums also offer deep discounts for the worst seats in the house -- those that might have a pole right in front of you. Buy those tickets and then see if you can sneak closer. Or roam around the public spaces in the stadium.

Free Movies

Summer is a great time to be outdoors. Clark notes that many communities offer free music or movies in the park.
"The park in the summer time is just a great place to do things for free," Clark said.
More of a blockbuster movie person?

"When I was I kid, my mom used to go to the bulk candy store, load up and basically stuff it in her purse and carry it in. I would never advocate someone breaking the law like that, but you can save some money by going to a matinee," Clark said.
Also consider drive-in theaters, which usually offer two movies back to back.

Another option for many families are summer programs at local youth centers or community organizations.
For instance, America's 2,686 YMCAs offer a number of programs for families, such as camping, swimming, as well arts and humanities programs, sports and teen leadership classes.
"At YMCAs across the country, we don't turn people away from inability to pay," said spokeswoman Mamie Moore.
There is also help for families who have lost jobs. The YMCA of Metro Atlanta, for example, is supporting members who have lost a job by offering financial assistance so they can keep their memberships by paying the full dues for up to three months. Ask your own local YMCA if they can offer the same deal.

One last idea... help your kids get a better understanding of the value of the dollar, and make a couple of bucks. Help them build and then open a lemonade stand in the front yard. The pride they will acheive making their own money is invaluable. With their own money, they can then buy their own icecream when the "Ice Cream Truck" drives by.

There are plenty of things the family can do for fun while respecting the budget. There is alot to be said about "unplugging" and having some good old fashioned fun this summer...so get out there and PLAY! See you when the street light come on...

Don and I are so proud of our oldest child Danielle. She Graduated from High School on Sunday. I have mixed feelings on her graduation. I am so excited for her future and for all of her wonderful accomplishments, however I am mourning the loss of her childhood. I know she will do great things. She is going into Music Education and is bound for Eastern IL. University in the fall. She will make a wonderful teacher. She is so good with kids and is very patient.

On Friday June 13th, she and her boyfriend Nate attended her Sr. Prom. The prom was the start of the very exciting and memorable weekend for the Graduating class of 2010 of Willowbrook High School.

Danielle and her wonderful friends are a very close bunch and I think it is safe to say, they will remain close for years to come.

Congratulations to the Willowbrook High School Class of 2010!

Things You Can Do In 1 Minute or Less

You just found out someone is coming over and you don't know where to start picking up the mess in the house! We've all been there. Scrambling to make it look like we are the most "with-it" people in the planet. HA!

We seem to live with the pile next to the phone, or the stack of bills on the counter, without really seeing- them until someone comes over. Putting them away takes just seconds, yet we ignore them.

Letting things clutter my home makes me feel disorganized...even if I KNOW where everything is. So why do I let things pile up? **Rule of thumb: Only handle it ONCE!

Lots of easy things to do can make a real difference in the way you feel about your home. Short on time? Here are things you can do that take 1 minute or less:

1. Turn on some fun music

2. Wipe the crubs off the table

3. Carry a basket and take things to rooms they belong in

4. Reply to an e-mail

5. Water a plant...before it is too late!

6. Put papers to be filed in a basket. Later, take basket to file papers in file cabinet.

7. Empty the trash can

8. Change the TP roll

9. Wipe spots off the mirror

10. Gather empty dishes, and take back to the kitchen

11. Put your plate in the dishwasher

12. Swish a brush around the toilet bowl

13. Hangs towels up...don't drop them on the floor.

14. Sweep the kitchen floor

15. Toss junk mail as you sort the mail

16. Put a basket with your errand supplies by the door so you are ready to go

17. Toss dirty laundry in the landry basket NOT on the floor.

18. Use the last of something? Add it to the grocery list.

19. Put shoes away

20. Give someone a hug!

How to Make an Upside Down Tomato Planter

For the past 2 years I have been intrigued by the upside down tomato planters I have seen in the stores. I have a pretty serious squirrel problem...they love to eat my vegetables! The planters in the stores are a bit pricey, so I decided to make one of my own with items I have laying around my home.

First, find a large plastic hanging planter and a tomato plant. I reused an old hanging planter from last year. The tomato plant I chose, produces medium sized fruit. (I was afraid if the fruit was to large it may pull itself out of the pot!)

Drill or cut a 2" hole in the bottom of the planter.

Place a piece of fabric over the bottom hole, inside the planter. I used a piece of reminant fabric. This keeps the dirt from washing out the hole in the bottom when you water. Cut throught the fabric a couple of inches...enough to feed your tomato plant's roots though the opening.

Feed the tomato plant through the hole, upside down of course. Hold the plant in the bottom of the pot with one hand, while you use your other hand to fill the pot with potting soil. Lightly tamp down the soil around the root ball to secure it into the pot. Water the plant from above, and hang on a shepherd's crook.

For a finishing touch, plant herbs in the top of your pot. You could use oregano or parsley or just about any smaller herb. I hope this strategy keeps the pesky squirrels hungry!

My List

I am not one to make a big "To Do" about New Years Resolutions...and you may be asking, why is she talking about that when it is clearly April!? Well, with a new season everything seems to refresh itself and Spring speaks to me louder than the dead of winter.

So, I have decided to make a list of things I would like to do this spring and this summer.

My List:

1. Start exercising regularly.
2. Sew some things for my home, myself, and my family.
3. Have my sewing machine "tuned up" so sewing will be less of a chore.
4. Visit family more often.
5. Plant my veggie garden and actually "tend" it!
6. Preserve some of the bounty of my garden.
7. Plant a wildflower garden in the "way-back" of the yard.
8. Learn to take better photos.
9. Brush up on my Spanish
10. Be more organized!
11. Spend "quality" time with my family.

Most of the items on my list are enjoyable to me. A few are more or less ambitions. I guess the theme of my list is to live my life simpler. (if that is a word) Instead of buying everything, I would like to be more self sufficient in my own home.

I am excited to start on my list and I will keep you updated on how I am doing. Wish me luck!

Morton Arboretum

Friday, the weather was 81 degrees and breezy. My son Nicky and I decided to take a field trip to the Morton Arboretum in Lisle, IL. A mere 5 miles from our house. The expansive natural area makes you feel as though you are in the middle to the most secluded part of the country...certainly not the Chicago suburbs!

This season's attraction is the Steelroots sculptures. There are 15 dramatic sculptures of abstract root forms set amongst the 22 -acres of Conifers. You can touch them, picnic amongst them, and enjoy the beauty of them up close.

This is one of the largest Steelroots sculptures at the Arboretum. Notice the "little one" running under it. The sheer size of these scultures make you realize the wonderful network of root systems under the ground keeping our trees and shrubs healthy.

Other "upcycled" scultures make use of old pipes and sprockets. This one my son named the sea anemone.

Nicky likes to check things out up close and personal.

Here he nearly slips and falls in the creek.

These little blue flowers were EVERYWHERE in the park. Beautiful!

The magnolias were blooming early this Spring as well.

We were oly able to see a fraction of the Arboretum in the 4 hours we were there. I know we will return to explore more of the hundreds of acres throughout the summer.

Peach Crisp

Dessert today!

Yum!!!!

Peach Crisp:

2 cups frozen peaches (or fresh)

1/4 cup brown sugar

1/2 tsp. cinnamon

Topping:

1/2 cup brown sugar

1/2 cup flour

1/2 cup oats

3/4 tsp. cinnamon

3/4 tsp. nutmeg

1/3 cup butter, softened

Thaw peaches (if using frozen) in strainer under warm water. Place in greased baking dish. Sprinkle with brown sugar and cinnamon. Mix topping ingredients together using a pastry blender until mixtures resembles coarse crumbs. Sprinkle over fruit.

Bake at 375 degrees F until light brown and bubbly. Serve hot with vanilla ice cream.

* You can substitute other fruits for the peaches: apples, blackberries, cherries, blueberries

Yard Clean up

I am very excited that the rain we were supposed to get the day before yesterday missed us, but that means it is time to get to work and clean up the yard. It has been a very long winter and I am very anxious for the warmer weather I know will be here soon. I want to be able to enjoy the outdoors and therefore need to clean up the yard.

I have perennial pruning to do as well as, tree and shrub pruning, leaf pickup, stick pickup and lawn fertilizing to do. I need to mulch the perennial garden and till the vegetable garden for the lettuce and spinach planting. I know it is still too early to mow the grass but I am chomping at the bit to see those gorgeous lines on the lawn again. I feel a sense of serenity, seeing the mower lines in the grass. Kind of like seeing the vacuum lines on the carpet in the house.

Ultimately, I want to see my beautiful spring and summer flowers in all their glory. I may have to take a trip to the Morton Arboretum this week to be inspired and drink in the beautiful view and smells of spring. Do you hear a field trip coming? I do! Work first though...

Even though our Chicago Suburb received another inch of snow yesterday, the first day of Spring, I am confident that Spring is here to stay. The snow melted today and on my foot tour around my yard, I found a cute purple Grape Hyacinth blooming in the sun. It reminded my that I LOVE the colors of Spring! Purple seems to be one of the first colors to appear in my garden at this time of the year. This post is a tribute to all thing purple. :)

I have several purple items listed on my etsy site. This is one of my favorites! I have made several different variations of this bracelet recently, and have sold every one of them at local craft fairs. You can get your own designer bracelet here.

The Spring season means for me it is time to jump head first into feathering my nest. I clean like a fiend and get my home ready for entertaining. Donut Burger

I had to laugh when I saw this posting at Happy Lady Eats.

It is my son's "Dream-come-true" in the way of food adventures. This amazingly indulgent treat combines all the insides of a traditional burger sandwiched in the middle of a glazed doughnut. It may be a heart attack on a plate, but it sure does look good.

My son has been known to pile up a stack of Krispy Creams and them squish the air out and shove it in his mouth. I can't recall how many donuts he managed to "cram" in his mouth, but it was alot!

A donut burger is now on his food wish list. Believe it or not, he is stick thin, so the extra calories would do him good. Just a thought. :)

Swimming

Those of you who know me well, know that my whole family is REALLY into swimming. It consumes the majority of our free time. All 3 of my kids are competitive swimmers and they practice for several hours each day. My boys competed in their High School Sectional meet yesterday, and did quite well. In fact, they will be swimming in the IL. State meet on Friday and possibly Saturday.

Through the years, the swim suits competitive swimmers wear have changed dramatically. Many years ago, you may have seen boys wearing suits that looked like their Mother's had knitted them. (See above) These suits did not help the swimmer swim fast, but merely offered those that wore them a sense of modesty. The cost?...a skein of yarn.

Until recently, the suits looked like they were made of rubber and covered their entire bodies. (Circa Michael Phelps at the 2008 Olympics) These suits were intended to help the body to swim fast, and those that wore them, broke all established records to date and cost the swimmers upwards of $400!...for a swim suit!

Now, however, the suits have come full circle, minus the Mom knitting part. The suits today are made of a high tech fabric and resemble bike shorts. The kids at the sectional meet yesterday, all wore the "bike short" suits and low and behold....STILL broke even the newest records established with those "fast rubber" suits! Cost? ...$50-$100...not bad by today's dollar.

The motto? Speed is between your ears and your training. A suit is needed because the law will not allow them to swim naked. All the money in the world will not make you faster.

Way to go boys!

Illinois Earthquake

I MUST sleep like a rock...

...this morning the western suburbs of Chicago experienced an earthquake of a 3.0 magnitude and several aftershock at about 4:00am. The epicenter was only about 30 miles from my home, and I did not feel a thing, although it seems everyone else did.

My daughter said it woke her up because her bed was shaking. She said the things on her dresser were rattling as well. Funny thing is...she could not explain it after the fact, so she just went back to sleep. I find it funny that she did not bother to wake either my husband or myself up to make sure everything was OK. If I had thought the ground was shaking under me, I would have been a nervous wreck...not her!

This winter, the Chicago area has certainly see a lot of now...it is not over yet!

We are expecting another 10" by this time Tuesday night. Yes, it is time to hit the grocery store and prepare to be snowed in. As much as I like a good snow-fall, it is February- and I am dreaming of tilling my garden. This newest prognostication is disheartening to me.

I will make the best of it. I will make some soup and snuggle up to my kids with a good movie. Any excuse for a good snuggle :)

Mexican Chicken Casserole

Mix together:3 boneless/skinless cooked chicken breasts, cubed5 corn tortillas cut into "bite size" pieces1 can low fat cream of chicken soup1/2 cup low fat chicken broth1 cup low fat grated cheese1/2 small can diced chilies

Pour mixture into Pie Plate. Sprinkle Mexican seasonings on top, cover and bake at 350 for 30 minutes. This serves 4 people.

Artichoke Dip

Mix together:1 can (14 oz) artichoke hearts, drained, chopped1 pkg. (8 oz) Feta Cheese, crumbled 1/2 cup shredded Parmesan Cheese1 clove garlic, minced 1 jar (2 ox) diced pimientos, drained (optional)

Spoon into Pie Plate. Bake at 350 for 20 to 25 minutes or until lightly browned. Serve with assorted crackers, veggies or pita triangles. Makes 2 cups.

Easy Apple Crumb Pie

Place one can apple (or other fruit flavor) pie filling in Pie Plate. Sprinkle with one package dry "Jiffy" yellow cake mix and pour 1/4 cup melted butter over the top.

Bake at 350 for 40 minutes or until golden brown. Delicious served warm over vanilla ice cream.

Jewelry Trends This Season

What is hot this season in jewelry? Without being super trendy, the best “on-trend” designs on the runway can certainly be translated to beautiful pieces worn by all of us. Here are a couple of examples of the designer trends and my own interpretation of the theme.

Chandelier Earrings

Chandelier earrings are perfect accessories this season because they are typically embellished with gorgeous gemstones that elegantly cascade down the ears and frame a woman’s face beautifully. The above set of Chandlier's are the designer version, while the Pink version below, are my interpretation of the trend.

This season look for earrings with intense color palettes such as infusions of fuchsia with garnet or deep olive greens with topaz. A burst of fierce color and glistening gemstones creates a striking contrast that gives any ensemble a touch of alluring glamour. Chandelier earrings are usually worn without a necklace. They are intended to be the center of attention.

Bib Necklace

This “Bib” necklace flaunts large, over-sized shapes against muted color schemes. Look for eclectic bold pieces that infuse various textures within the design such as ribbons vs. metal and woods vs. gemstones and colorful pearls. The "Bib" necklace is to be worn with little if any other jewelry. It is a great way to stay on trend while exuding a look that seems like it required a minimal effort.

The two examples of "On-trend" yet sidewalk savvy "Bib" necklaces are again, my interpretation of the designers. I used sterling silver sticks for the embellishments.

Velcro Ball

Since it is still cold outside, you local dollar store should still have those "stretchy" gloves in-stock. Pick up a few pairs to make this fun indoor game for the kids.

Materials you will need:

a pair of "stretchy" gloves ($1)

a pair of "whiffle" golf balls ($1)

Velcro sticky rounds ($1 and up)

Stick the velcro rough side to the balls in several places. Put a glove on the catching hand and have fun tossing the ball back and forth and catching it IN THE HOUSE!

For Christmas, my hubbie ordered the new Barnes and Noble nook e-reader for me. It was on back order at the time, and I just received in on Tuesday! I love it! I most certainly am NOT a "Techy" but, this thing is really COOL! I do love the feeling of an actual book in my hands, but the convenience of being able to have the choice of over 1500 books to read in my purse is a huge draw for me. The books are only about 1/2 price to download too! (Even the new releases)

I am big into reading lately. I drive my kids to their activities and practices and sit there waiting for them to finish for hours. Instead of shopping while they practice, I have been reading. I will tell you that not having to hold the e-reader while sitting or "lounging" on the bleachers is great! I set it down and hit the button to turn the page. I can read it at any angle and it does not flop shut when I put it down.

Downloading is a snap! In my home I have a wireless router that connects with the nook, but if I am out and about and want to download a new book, I merely need to click "connect" on the touchscreen, and it picks up a 3G connection for FREE, and the entire Barnes and Noble library is at my disposal. So convenient, and no wires!

I can even share my favorite book with a friend, just like a "real" book! I choose the book I want to share, and send it to a friend's nook. They are free to read it for 14 days before it reverts back to my nook. How cool is that!?

It is easy to read, and I am really enjoying the fun of taking it with me everywhere! I could purchase really cool carrying cases at Barnes and Noble, but I plan on making something really chic for it soon. I will save that for another blog. :)

A Great Salad

This recipe was borrowed from Cooks.com. It is truly a great salad and so simple!

1 bunch of spinach
1 big honey crisp apple, sliced thinly
1/2 red onion, sliced thin
4 or 5 cremini mushrooms, chopped into pieces
1/4 C. cubed extra sharp cheddar

Olive oil
red wine vinegar
salt & pepper

Combine all ingredients...so simple! I mix a bit of the olive oil and a bit of vinegar with salt and pepper to taste and dress the salad. The tartness of the apple and red onion really sing together. If you have it on-hand, toss in some grilled chicken and/or an avocado.

Serve in your favorite piece of Longaberger pottery and YUM!
